I like alcohol. The smell, the flavor and above all, I love sharing these moments with family, friends or colleagues. There's something about a swirling glass of liquor that makes me feel powerful.

The dream usually ends there. I finish that drink, in a haze followed by a shaky, unproductive descent. It disrupts my sleep cycle, leaving me feeling tired the next day. I say to myself: "Next time, I don't drink". But, the next night, I have another drink to "get in the mood", because to refuse is to isolate yourself.

 

I hear more and more people say things like "I'm trying to quit drinking" or "I'm trying to cut down on my drinking".

Nobody ever said that.

 

Why so? The drink we use to gather together doesn't seem to live up to its promise.

So most of the time I don't drink alcohol. I lost those moments of sharing.

I wanted to recreate them. I started exploring.

 

If I had to offer or serve a bottle to shine and bring together those who share it, what would be the nectar of my dreams?

 

I wanted a drink that:

  • Elevates me and gathers my guests
  • Relaxes me and awakens my senses without creating addiction
  • Improves my immunity and general health

Of course, it also had to taste sophisticated so that I could share it on special occasions.

Insane ambition, but I went for it.

 

At 21, I discovered the world of wine alongside a family friend. Compared to the strong spirits I'm used to, the wine is a marvel of complexity for a lower alcohol content. I quickly realize that it is always too much.

I still decided to study this mythical drink, because I saw in it extraordinary potential.


I am becoming an oenologist.

Following a crush on the most intimate of Languedoc appellations, I began to create my own wines.

Yet I'm still uncomfortable with the social pressure to drink alcohol at family and work events, and the sense of exclusion it creates.


One evening, seeing my hesitation between a detox drink and a glass of alcohol offered by my friends, my wife handed me her glass, saying: "If only this wine were alcohol-free, it would be the perfect alternative for you: healthy and sophisticated".

When I get home, the idea of ​​removing alcohol from my wines never leaves me and prevents me from sleeping. I then think back to the history of wine since its origin and realize that:

The natural transformation of grapes is vinegar.

Wine was discovered by accident by nomadic populations who sought to store grapes for transport.


Wine, as we know it today, is the perfect mastery of the process of cultivation, fermentation and ageing. Without the human there is no wine.
Recognized as good for health, the only element that hinders the recommendation of its consumption is alcohol.

By studying cold dealcoholization processes, I have noticed that this very technical step must be carried out last if you want to keep all the aromas and benefits of a wine.


For me, then, it's obvious, this step is the missing piece to create the nectar of my dreams.

I then embarked on the cold dealcoholization of my wines.

 

After my share of disasters, I made it. It has become my gem.

Now I choose it every time. I feel the benefits on my mental, physical and emotional abilities. My senses are more awake, I eat better and enjoy it more. I sleep better and have better immunity to disease. I feel like I've found the purpose of wine.

 

It's a personal process that led me to find the terroir, the grape varieties and the techniques in which I believe to meet my needs. I created this cuvée for myself. I called it INSPIRE. Today, my choice is made and I share it with you.
